As you can see, the ale is a nice orange color, and though it looks really hazy in the photo, it cleared up nicely. The head was quite small, but since I’m not into wading through bubbles, that’s fine by me. The flavor is a cross between a hefeweisen and a belgian saison, and I find this to be a great ale for the summer with the bitterness/pepperiness of the hops and citrusy notes to be a good play against the often sweet seeming phenols. We used the Wyeast 3522 as suggested though the brewery uses the White WLP550. For a blend of old world ingredients and uppity new world attitude, this is a keeper.
To go with the meat pies and cheesy goo from another post, here is our recipe for mead, the honey wine that is all through history and fantasy. Here’s your warning: MAKE THIS EXACTLY BEFORE YOU TRY TO SCREW AROUND WITH IT. We’ve had far too many people rave about our mead, then whine when theirs doesn’t come out right. It’s because they didn’t listen and its a shame to waste all that relatively expensive honey. The most recent batch we made came out to 13.9% alcohol. Recipe after the break….
A couple of weeks ago we bottled the hefeweizen that we made from the Northern Brewer kit. At that point the signature banana aroma was pretty strong. After a couple weeks in the bottle, it’s even stronger, but much more blended with the other aromas in the beer. If you get this kit, get it with the Wyeast 3068 Weihenstephen yeast. Husband loves hefe from having served in the US Army and being sent to Germany. I also love it. Generally we drink Franziskaner and this is quite comparable.
Just got a bottle of Dogfish Head Ta Henket, their version of an ancient Egyptian beer. I was pleasantly suprised that Wegman’s had this in their beer section; they also had Midas Touch. The Ta Henket will be tasted tonight, and the Egytpian pantheon toasted, especially Sekhmet who really likes her beer. They’re at least some fun, if just as imaginary as any other.
